Vegan tostada with jackfruit, avocado, salsa, and cheezy sauce. Toasted tortilla topped with seasoned jackfruit, salsa, vegan cheese sauce, diced red onion, fresh avocado, tomatoes, and shredded lettuce. Easy to make vegan recipe that everyone will love.
- 20 oz. can of jackfruit
- 1 recipe taco seasoning (recipe below)
- 1/2 cup water
- 1 cup salsa
- 1 cup vegan cheese sauce
- 4 tortillas
- 2 avocados, peeled and diced
- 2 tomatoes, diced
- 1/2 red onion, diced
- 3 cups shredded iceberg lettuce
- few sprigs of fresh cilantro
Preheat the oven to 425°F
Drain and rinse the jackfruit with cold water. Squeeze out the excess moisture and shred with your hands.
In a small pan with a lid, place the jackfruit, taco seasoning, and 1/2 cup water. Bring to a boil, cover and simmer for about 15-20 minutes.
Layout your tortillas on sheet pans. Spread salsa over the top of each. Drizzle the cheese sauce and scatter the jackfruit over.
Bake in the oven for about 5 minutes or until the tortillas are crispy.
Top the cooked tostadas with avocados, tomatoes, red onion, cilantro, and shredded lettuce.
Drizzle over more cheese sauce. Cut into wedges and serve.
