Vegan cucumber yogurt sauce. Simple and healthy cold sauce made with cucumber, coconut milk yogurt, green onion, olive oil, and spices. Spoon over grilled or roasted vegetables for a quick summer dinner.
- 1 cup plain coconut yogurt
- 1/2 cucumber, peeled, seeded, and diced
- 1 Tablespoon scallions, chopped
- 1 Tablespoon olive oil
- 1/8 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- dash of Tabasco sauce
Combine all ingredients in a small bowl. stir and adjust seasoning.
Store in a mason jar or other container. Refrigerate until needed.
