We are very fortunate to spend our summers in the hearth of the Adriatic coast, in a small place called Medici. Here is a lovely video that inhabitants of that small village have made for the tourism promotion:
And sometimes, we are even more fortunate to catch a really big and beautiful fish called Gilt-head bream, or what we called here in Medici in Dalmatia, Orada or Komarฤa. Here is one that we have caught this morning. And since it is a really beautiful specimen, we decided to prepare it in a special way. We have prepared it under the baking lid! Recipe is very simple, but it is a little complicate to prepare it.
Firstly, you will need a really big fire. In a large cooking pot put sliced potatoes, cherry tomatoes, rosemary and garlic. Spice everything with salt, pepper and olive oil. We are very fortunate (again ๐ ), that beside fish that we catch, we also have home grown tomatoes and olive oil. Put that cooking pot in the middle of the fireplace.
Put a baking lid on it, and cover everything with ember, a lots of it. It should look like this:

Open it after 30 minutes, and turn potatoes on the other side. Again cover it with baking lid and ember, and leave it for more 15 minutes. Then we are ready to put the fish in. Just place the fish (before you have to spice it up with salt and pepper) on potatoes, and pour it with olive oil:
After 10 minutes open it, and turn the fish the the other side, and pour it with white wine (about 2 deciliter). Cover it with baking lid and ember again (last covering), and leave it for more 15 minutes.
Finally open it, and the fish is ready! It is something between grilled and cooked fish, while potatoes soaked all the juices in which everything is cooked. It is really delicious and it is a real specialty from Dalmatia. Enjoy!
